They say the most important meal of the day is breakfast. Starting the day off right with healthy foods is supposed to fill you up and make you feel better. A great breakfast should keep you full, energized, and focused. Healthy breakfast egg muffins are a great choice for you and your family! Their name says it all. I have severe anxiety and stomach issues, and finding meals that I can keep down is a blessing for me. I realized that I need to not only eat healthier but eat smarter as well.

Healthy Breakfast Egg Muffins

For this healthy breakfast egg muffin recipe you can pick and choose which vegetables you want to use, and what combinations you want to experiment with. I switch my ingredients based on what I have available, and what new combinations I can come up with to keep my an my family excited for this morning treat. Essentially, I use whatever I have on-hand and left-over in my fridge. Veggies, herb, meats, cheese, etc. You can create them according to your taste, and 8no combination is right or wrong. Coming from someone who doesn’t like to cook, and has a hard time following recipes or cooking in general, there’s no simpler recipe. If I can make them, you can make them! Plus, you can get your family to join in on the fun! Kids love to help cook in the kitchen, and here’s a great way to let them!

These amazing breakfast egg muffins are so simple to make that your kids can get their hands dirty and help you with the process. They love helping to separate the toppings and add them into the muffin pans. Then, they get to add the egg yolk and watch these yummy muffins bake in the oven while during the cleanup process. Not only is this a fun activity that you can do with your kids and family, but it’s so healthy that you can feel good about eating them over the course of a few days.

What You Need for These Nutritious Breakfast Egg Muffins:

Thankfully, you only need a few items to create these little bundles of yummy! You will need a mini muffin  tin, eggs, milk, coconut oil (or substitute), and your favorite ingredients! You can add a variety of ingredients depending upon you,, our kids, and your families taste buds. If you want your kids to try new vegetables, this recipe is a great way to do that. The vegetables are hidden in the eggs and other ingredients so you won’t have to worry about them being picky eaters.

Depending on the size of your family, if you don’t eat all of the healthy breakfast egg muffins you can save some for later in the day, or have them for breakfast the next day. You can also pop them into a lunch box or take them with you to work for a healthy snack later on.

Healthy Breakfast Egg Muffins

Prep: 7 minutes

Cook: 15-20 minutes

Total: less than 30 minutes

Yields: 12 muffins in mini-muffin pan

Ingredients

  • 8 large eggs
  • 2-3 TBSP milk
  • Ingredients of your choice chopped small: peppers, spinach, zucchini, mushrooms, cheese, turkey, ham, bacon, yellow onion, tomatoes, etc.
  • Salt, pepper,, spice to taste
  • Herbs (if you’d like)
  • Seeds (If you’d like:) – I add Chia and Flax Seeds
  • Coconut Oil (You can substitute if needed)

Instructions

  1. Oil the muffin tin with coconut oil (or the oil of your choosing.) I prefer coconut oil but you can choose whatever you have or like.
  2. Preheat your oven to 375 degrees
  3. Whisk together 8 large eggs, ⅔ TBSP of milk (dairy or non-dairy), salt, pepper, and any herbs, seeds, or spices you want to add for extra taste or nutrition.
  4. Divide your ingredients evenly into the muffin tins
  5. Pour egg mixture into each muffin tin to the top
  6. Garnish each muffin tin with your choice of cheese if you’d like (grated, shredded, mozzarella) etc.
  7. Bake for 15-20 minutes. (Depending upon how new your oven is, I recommend checking after 15 minutes, then again at 18 minutes, then 20.)

Notes

I personally added 2 TBS of chia seeds and 2 TBSP of flax seeds to my mixture. For me, it also took 19 minutes for my egg muffins to be completed.
